There are a few factors that can go into this? First, were you thin to begin with? second, how long have you been eating take out and such? If you have been eating like that for a very long time, then you body is probably going through a bit of a shock. It has figured out how to be most efficient with the nutrition that you were giving it, and then out of the blue here is this curve ball. Kudos to you for eating healthier though, I think your body is just trying to get used to it.
If you were/are thin, another thing that could possibly be happening is because you were potentially deficient in some vitamins and minerals, all of this extra vitamins are making you put on some healthy weight, the bloating could be from is you are getting more fiber than you used to. Fiber holds water in the body and cleans out your digestive tract. So it's really good to get enough fiber. Also, have you done enough research on what comprises a healthy diet? A few pointers to get you started are, when buying breads try to stick with "whole grains" not necessarily whole wheat. Whole grain have a lot of healthy nutrients like fiber and protein. The whole grain variety also gives you sustained energy, whereas refined will give you a jolt then let you down. Also, make sure your getting enough raw fruits and veggies. Another thing is, are you eating enough? A lot of people think that because they are eating healthier they have to starve themselves, not true! check out http://www.freedieting.com/tools/calorie_calculator.htm to calculate how many calories you should be getting.
You might also try doing this gradually perhaps with the help of a nutritionist or doctor? like instead of drinking 3 sodas per day you could drink just one for a few weeks and then a half of one and then cold turkey. Or instead of getting take out or fast food for two meals a day, you could do one meal a day for two weeks and then 3 times a week etc… given your symptoms, I would highly suggest seeing a doctor about this just to get their opinion. Because eating healthy is extremely beneficial to overall health and well being, you just want o ease yourself into it. It is a major life style change.
